These cheesy scalloped potatoes go great with polish or andouille sausages, I’ve even used chorizo for a bit of spice. Don’t scrimp on the cheddar, and your family won’t be able to stop at just a single serving!

Scalloped Potatoes and Sausage
Absolute crowd-pleaser alert! Cheesy and delicious, this scalloped potato recipe can stand on its own or work paired with a main dish. It holds great as a leftover and is easily reheated in the microwave too.

Ingredients
- 8 medium-sized yukon gold potatoes, peeled and sliced thin
- 1/2 lb sausage , sliced
- 1 yellow onion, chopped
- 1 package colby jack or cheddar cheese, 1/2 inch, cubed
- 3/4 cup sour cream
- 1/4 cup butter
- 1 cup milk
- 2 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder, optional
- 2 tbsp all-purpose flour
- 1 cup cheddar cheese, shredded
- fresh parsley or green onion, for garnish
Instructions
- Peel and slice potatoes. Easiest to use a mandolin or food processor, but can do it by hand if you are patient.
- Slice the sausage into similar thickness of 1/4 inch and dice the onion. Add both with the sliced potatoes into a large mixing bowl. Add cubed cheese and mix together.
- Preheat oven to 375 degrees. Spray a casserole dish with nonstick cooking spray and pour in the potato mixture.
- In a saucepan over LOW HEAT, add the milk, butter, flour, sour cream, salt, pepper and garlic powder. Whisk together, letting the mixture thicken into a perfectly creamy sauce.
- Pour the sauce evenly over top of the potato and sausages. Sprinkle the shredded cheddar cheese on top. Cover with foil and bake at 375 degrees for 45 minutes.
- Remove the foil and continue baking for another 10-15 minutes to crisp the top just a little. Garnish with the chopped parsley or green onions and enjoy!
