Scalloped Potatoes and Sausage

Taking me back to my childhood every time I make this. For us, it’s a classic dish. One you can eat on its own, or along side another family favorite.

These cheesy scalloped potatoes go great with polish or andouille sausages, I’ve even used chorizo for a bit of spice. Don’t scrimp on the cheddar, and your family won’t be able to stop at just a single serving!

What Type of Sausage Should I Use?

  • Smoked Sausage: This is my favorite choice. It pairs well with the creamy potatoes and adds so much flavor to the dish.
  • Andouille Sausage: A touch of Cajun influence, andouille sausage is a great pick. Its bold and zesty flavor can add a Southern twist.
  • Chorizo: If you’re feeling adventurous, chorizo sausage gives a delightful smokiness and spice!
  • Chicken or Turkey Sausage: For a lighter option, consider using chicken or turkey sausage.

Why You’ll Love These Cheesy Scalloped Potatoes and Sausage

  • Hearty Comfort Food: A warm and hearty dish that combines the creaminess of scalloped potatoes with the savory goodness of sausage. Win!
  • One-Pan Wonder: This all-in-one casserole dish saves you time and effort in the kitchen.
  • Presentation: The golden-baked top and layers of goodness make this a standout dish.

Servings: 8 people
Course: Main Course, Side Dish
Prep Time: 20 minutes
Cook Time: 1 hour

Ingredients

  • 8 medium-sized yukon gold potatoes, peeled and sliced thin
  • 1/2 lb sausage , sliced
  • 1 yellow onion, chopped
  • 1 package colby jack or cheddar cheese, 1/2 inch, cubed
  • 3/4 cup sour cream
  • 1/4 cup butter
  • 1 cup milk
  • 2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder, optional
  • 2 tbsp all-purpose flour
  • 1 cup cheddar cheese, shredded
  • fresh parsley or green onion, for garnish

Instructions

  • Peel and slice potatoes. Easiest to use a mandolin or food processor, but can do it by hand if you are patient.
  • Slice the sausage into similar thickness of 1/4 inch and dice the onion. Add both with the sliced potatoes into a large mixing bowl. Add cubed cheese and mix together.
  • Preheat oven to 375 degrees. Spray a casserole dish with nonstick cooking spray and pour in the potato mixture.
  • In a saucepan over LOW HEAT, add the milk, butter, flour, sour cream, salt, pepper and garlic powder. Whisk together, letting the mixture thicken into a perfectly creamy sauce.
  • Pour the sauce evenly over top of the potato and sausages. Sprinkle the shredded cheddar cheese on top. Cover with foil and bake at 375 degrees for 45 minutes.
  • Remove the foil and continue baking for another 10-15 minutes to crisp the top just a little. Garnish with the chopped parsley or green onions and enjoy!
