I’m a big fan of casseroles (you may have noticed!) because they’re usually so simple yet soooo delicious. This one is no different. This pulled pork cornbread casserole recipe will give you a delicious cornbread crust, holding in all the savory and tangy pulled pork below.

We’ve tried a few different changes to the recipe here and there, such as adding black beans, bell peppers or hot peppers. We love this one the most.

Pulled Pork Cornbread Casserole Ingredients

  • 1 tablespoon olive oil
  • 1 cup onion, diced
  • 1 clove garlic, minced
  • 2 cups barbecue sauce
  • 1 can sweet corn, drained (or 1 ½ cups frozen corn kernels)
  • 4 cups pulled pork
  • 1 cup cheddar cheese, shredded
  • 1 box of cornbread mix batter, prepared to box instructions

How to Make Pulled Pork Cornbread Casserole

I love leftover recipes, some of the work is already done. With just a few minutes of prep and a handful of ingredients, you’ll have this in the oven in no time.

  1. Preheat your oven to 375 degrees.
  2. Prepare the Filling:
    • In a large skillet heat the olive oil over medium heat.
    • Add diced onions and minced garlic, cooking until they become soft.
    • Stir in the barbecue sauce, pulled pork and sweet corn. Cook for a couple of minutes.
    • Remove the skillet from heat.
  3. Baking Dish:
    • In a greased baking dish, spread out the pork mixture evenly.
    • Sprinkle the shredded cheddar cheese on top of the pull pork layer.
    • Prepare the cornbread batter according to package instructions.
    • Pour the cornbread batter evenly over the pork mixture and cheese. Ensure it covers the entire casserole evenly.
  4. Bake in Oven:
    • Place the baking dish in the preheated oven and bake for 30 minutes or until the cornbread is golden brown and fully cooked.
    • Remove the casserole from the oven and allow it to rest for a few minutes before serving.
