Old-Fashioned Hoop Cheese Mac and Cheese
This classic dish combines simple ingredients to make a tested and true creamy and dreamy macaroni and cheese.

- 3 cups hoop cheese, shredded
- 1/2 cup whole milk
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon cayenne pepper, optional
- fresh parsley for garnish, optional
Prepare the Cheese Sauce:
In a saucepan over medium heat, melt the butter. Add the flour and whisk continuously for 2-3 minutes to create a roux.
Gradually pour in the milk while continuing to whisk until the mixture thickens and becomes smooth.
Reduce the heat to low and add the shredded hoop cheese to the sauce. Stir until the cheese is fully melted and the sauce is creamy.
Add paprika and cayenne pepper (optional) for a hint of spice.
Season and Serve:
Season the mac and cheese with salt and black pepper to taste.
