Macaroni Corn Casserole Ingredients

  • 14 oz macaroni noodles
  • 2 tbsp all-purpose flour
  • 1 stick of butter
  • 2 cups whole milk
  • 1/2 tsp onion powder

  • salt and pepper, to taste
  • 2 cups cheddar, shredded
  • 2 cups gouda, shredded
  • 1 can creamed corn

How to Make Macaroni Corn Casserole

It all depends on what’s in the fridge, but sometimes I’ll go for all cheddar in this recipe. I think its better with the gouda, but if you don’t have any its all good.

  • Step 1: Preheat and Prepare
    • Preheat your oven to 350 degrees.
    • Cook the macaroni noodles according to the package instructions. Drain and set aside.
  • Step 2: Make the Cheese Sauce
    • In a large saucepan, melt the stick of butter over medium heat.
    • Stir in the flour, mustard powder, paprika and onion powder to create a roux. Cook for 2-3 minutes, stirring constantly until it turns golden. Don’t overcook! It can burn.
    • Gradually whisk in the whole milk until the mixture becomes smooth and thickened.
    • Add salt and pepper (I use about 1/2 teaspoon of each) and continue to cook, stirring for 2-3 minutes.
    • Remove the saucepan from the heat.
    • Stir in the creamed corn and 1 1/2 cups each of shredded sharp cheddar & gouda cheese. Continue stirring until the cheese is melted and the sauce is perfectly blended.
  • Step 3: Combine and Bake
    • In a large mixing bowl combine the cooked macaroni noodles with the cheesy creamed corn mixture. Mix until well coated.
    • Give it a taste, add more salt or pepper if needed.
    • Transfer the mixture to a greased casserole dish.
    • Sprinkle the remaining 1/2 cup of shredded cheddar and 1/2 cup of shredded gouda.
  • Step 4: Bake to Perfection
    • Bake in the oven for approximately 25-30 minutes or until the casserole is bubbly, and the top is golden brown.
